- Προετοιμάζεις διάφορα είδη sushi, sashimi και ιαπωνικών πιάτων σύμφωνα με τις συνταγές και πρότυπα ποιότητας
- Επιλέγεις, χειρίζεσαι και προετοιμάζεις φρέσκα ψάρια, θαλασσινά και άλλα υλικά με έμφαση στη φρεσκάδα και ασφάλεια τροφίμων
- Εκτελείς και διατηρείς δεξιότητες μαχαιριού, παρασκευή ρυζιού και παραδοσιακές τεχνικές sushi
- Εξασφαλίζεις συνεπή παρουσίαση, μερίδες και σερβίρισμα σύμφωνα με τα πρότυπα του εστιατορίου
- Παρακολουθείς την ποιότητα και φρεσκάδα των υλικών καθ’ όλη τη διάρκεια της υπηρεσίας
- Συνεργάζεσαι με το ανώτερο σεφ για την ανάπτυξη νέων πιάτων sushi και εποχικών μενού
- Διατηρείς σωστή αποθήκευση, επισήμανση και ανακύκλωση των πρώτων υλών, ειδικά των ψαριών και θαλασσινών
- Κρατάς τον χώρο προετοιμασίας sushi καθαρό, οργανωμένο και πλήρως εφοδιασμένο κατά τη διάρκεια της υπηρεσίας
- Συνεργάζεσαι ομαλά με την υπόλοιπη κουζίνα για την έγκαιρη και αποτελεσματική εξυπηρέτηση
- Καθοδηγείς και μοιράζεσαι τεχνικές με το νεότερο προσωπικό κουζίνας όταν απαιτείται
- Τηρείς όλους τους κανονισμούς υγείας, ασφάλειας και υγιεινής (HACCP)
