- Καθοδηγείς και επιβλέπεις την καθημερινή λειτουργία της κουζίνας και όλων των χώρων εστίασης.
- Σχεδιάζεις, αναπτύσσεις και εκτελείς μενού που αντικατοπτρίζουν τη θέση και το γαστρονομικό όραμα του resort.
- Διασφαλίζεις εξαιρετική ποιότητα, παρουσίαση και συνέπεια στο φαγητό, καθώς και την ικανοποίηση των επισκεπτών.
- Διαχειρίζεσαι, καθοδηγείς και εμπνέεις την ομάδα κουζίνας, καλλιεργώντας συνεργασία, αριστεία και συνεχή ανάπτυξη.
- Τηρείς τα υψηλότερα πρότυπα ασφάλειας τροφίμων, υγιεινής και καθαριότητας σύμφωνα με τις απαιτήσεις HACCP.
- Παρακολουθείς το κόστος τροφίμων, τα αποθέματα, τις προμήθειες και τις εργατικές δαπάνες για την επίτευξη των δημοσιονομικών στόχων.
- Συνεργάζεσαι με την ηγεσία Food & Beverage για τη δημιουργία ξεχωριστών γαστρονομικών εμπειριών και ειδικών εκδηλώσεων.
- Παραμένεις ενημερωμένος/η για γαστρονομικές τάσεις, τεχνικές και υλικά, αναβαθμίζοντας συνεχώς τις προτάσεις του resort.
Βασικές προϋποθέσεις
- Ηγεσία και διαχείριση ομάδας κουζίνας, με έμφαση στην ανάπτυξη και την ομαδικότητα.
- Ανάπτυξη μενού και εξειδίκευση στη fine-dining γαστρονομία.
- Ποιότητα και παρουσίαση φαγητού, με γαστρονομική δημιουργικότητα και καινοτομία.
- Ασφάλεια τροφίμων και HACCP.
- Προϋπολογισμός, έλεγχος κόστους, διαχείριση αποθεμάτων και προμήθειες.
- Αγγλική γλώσσα και κατανόηση λειτουργιών luxury hospitality.
