At Four Seasons Astir Palace Hotel Athens, we are seeking a highly experienced Restaurant Manager to lead Pelagos Restaurant and Astron Bar &amp; Lounge as a permanent member of our team. You will set the strategic vision, manage operations and finances, drive revenue and profitability, and mentor the next generation of restaurant leaders. This role is central to the continued success and reputation of our Michelin-starred restaurant and sophisticated lounge.What You Will Do<ul><li>Own and execute the restaurant and bar concepts, ensuring exceptional guest experiences and operational excellence.</li><li>Develop strategic and financial goals, including revenue generation, GOR/GOP targets, and market positioning.</li><li>Collaborate closely with the Executive Chef, Sommelier, and Restaurant Marketing Manager to design menus, wine lists, and promotions.</li><li>Lead, train, and mentor front-of-house staff, fostering teamwork, excellence, and career development.</li><li>Maintain visibility during peak periods, engage with regular guests, and cultivate new relationships.</li><li>Manage operating costs, labor, and budgets effectively while maximizing profitability.</li><li>Oversee marketing, PR, and social media activities to enhance the visibility and reputation of the outlets.</li><li>Participate in local F&amp;B community and industry events.</li><li>Ensure compliance with health, safety, and service standards.</li></ul>What You Bring<ul><li>Bachelor’s degree in hotel or restaurant management, or equivalent vocational experience.</li><li>Minimum 3–5 years in a similar position, preferably in standalone or restaurant group environments.</li><li>WSET Level 2 or Court of Master Sommeliers – Introductory Sommelier Course preferred.</li><li>Proven leadership skills and ability to develop teams of service-driven professionals.</li><li>Strong financial acumen and understanding of P&amp;L statements.</li><li>Excellent communication, interpersonal, and guest engagement skills.</li><li>Passion for food and beverage, and knowledge of industry trends and market landscape.</li><li>European Passport or legal right to work in Greece.</li><li>Fluency in English; Greek is an advantage.</li></ul>What We Offer<ul><li>Competitive Salary &amp; Benefits, Employee Meals, Bus Transport, Uniform &amp; Laundry Services.</li><li>Ticket Restaurant allowance of €100/month.</li><li>Complimentary nights at Four Seasons Hotels &amp; Resorts globally.</li><li>Employee Recognition Program and access to global Training &amp; Development.</li></ul>Schedule &amp; Hours<ul><li>Permanent position – 5 working days/week with 2 days off. This is a full-time, permanent leadership position designed for a hospitality professional who excels in delivering ultra-luxury service within the most intimate of guest settings.What You Will Do&nbsp;<ul><li>Select, train, evaluate, plan schedules and ensure high employee performance, motivate, coach, and discipline all employees in the Hotel’s In-Room Dining Department to ensure that established cultural and core standards are met: long-range strategic planning for outlet operation.</li><li>Plan schedules &amp; ensure high employee performance.</li><li>Supervise the In-Room Dining operation as well as the Private Bar activities and its respective employees inclusive of managers.</li><li>Be creative when setting up guest room amenities.</li><li>Ensure attractive presentations and non-obtrusive service are delivered within guest rooms, inclusive of age appropriate items readily available.</li><li>The ability to be visible in the operation, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts.</li><li>Describe and ensure quality of all food items, ingredients, and preparation methods, as well as provide knowledge of wine and spirits in an elegantly appointed environment dedicated to an attentive and distinctive experience for 24-hour a day in-room dining and in-room private bar services.</li><li>Work closely with the Director of Food &amp; Beverage, Executive Chef and Sous Chefs to design effective menu and amenity options while ensuring excellent product quality at a fair price and attend regular operational meetings to ensure effective coordination and cooperation between departments.</li><li>Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control.</li><li>Observe physical condition of facilities and equipment in the guest rooms and make recommendations for corrections and improvements as needed.
