Τι θα κάνεις
- Επιβλέπεις τη λειτουργία της κουζίνας σύμφωνα με τα καθιερωμένα μενού και τα πρότυπα ποιότητας.
- Συνεργάζεσαι με την ομάδα κουζίνας για την ανάπτυξη ημερήσιων και εποχικών ιταλικών μενού.
- Ελέγχεις την ποιότητα, τη φρεσκάδα, τη γεύση και την παρουσίαση μέσω τακτικών δοκιμών και επιθεωρήσεων.
- Παρακολουθείς τα αποθέματα υλικών και προμηθειών και συντονίζεις την έγκαιρη αναπλήρωσή τους.
- Μειώνεις τη σπατάλη και μεγιστοποιείς την αποδοτικότητα στη χρήση των υλικών.
- Καθοδηγείς και εκπαιδεύεις νεότερα μέλη της ομάδας σε εξειδικευμένες τεχνικές.
- Επιβάλλεις πρακτικές υγιεινής, καθαριότητας, συντήρησης εξοπλισμού και ασφαλούς χειρισμού τροφίμων.
- Παρακολουθείς τις εξελίξεις στην πίτσα και την ιταλική κουζίνα και ενσωματώνεις νέες ιδέες και τεχνικές.
- Συμμετέχεις σε γαστρονομικές εκδηλώσεις, εργαστήρια και εκπαιδευτικές δράσεις για την ανάπτυξη των δεξιοτήτων σου.
Βασικές προϋποθέσεις
- 3+ χρόνια εμπειρίας
- Τεχνικές ιταλικής κουζίνας και παρασκευής πίτσας, με έμφαση στην παρουσίαση φαγητού.
- Πρότυπα ασφάλειας τροφίμων και κανονισμοί υγιεινής και καθαριότητας.
- Ποιοτικός έλεγχος και διαχείριση λειτουργίας κουζίνας.
- Διαχείριση αποθέματος και σχεδιασμός και οργάνωση.
- Εποπτικές ικανότητες, ηγεσία και διαχείριση ομάδας, εκπαίδευση και καθοδήγηση προσωπικού.
- Αγγλικά, MS Office και συστήματα POS.
- Γαστρονομικές Τέχνεςκατά προτίμηση
