What you'll do
- Prepare a variety of sushi, sashimi, and Japanese dishes following established recipes and quality standards
- Select, handle, and prepare fresh fish, seafood, and other ingredients with strict attention to freshness and food safety
- Master and maintain proper knife skills, rice preparation, and traditional sushi-making techniques
- Ensure consistent presentation, portioning, and plating in line with the restaurant's standards
- Monitor ingredient quality and freshness throughout service, flagging any concerns immediately
- Collaborate with the Head Chef and Sous Chef to develop new sushi dishes and seasonal menu items
- Maintain proper storage, labeling, and rotation of raw materials, particularly fish and seafood, to ensure food safety
- Keep the sushi station clean, organized, and fully stocked throughout service
- Coordinate with the rest of the kitchen team to ensure smooth, well-timed service
- Mentor and share techniques with junior kitchen staff as needed
- Follow all health, safety, and hygiene regulations (HACCP) at all times

Domes Miramare, a luxury adults-only resort and a distinguished member of the Domes Resorts collection, is looking for a skilled and passionate Sushi Cook to join our culinary team. You'll be responsible for preparing authentic, high-quality sushi and Japanese dishes, bringing precision, technique, and creativity to every plate while upholding the freshness and presentation standards our guests expect.

Requirements
Useful to have:
Proven experience as a Sushi Cook or Sushi Chef, ideally in a high-volume or fine-dining setting.
Strong technical skills in sushi preparation, knife handling, and traditional Japanese cooking methods.
Deep understanding of fish and seafood quality, freshness, and safe handling practices.
Knowledge of food safety and hygiene standards (HACCP certification a plus).
Fluency in Greek and/or English.
