About the job

The In Residence Dining (IRD) Manager is responsible for the overall daily operations of In-Room Dining, ensuring colleagues consistently follow One&Only standards in the delivery of food and beverage to guestrooms and villas. The role directs, trains, and supports the IRD team to deliver exceptional service, while working closely with Culinary and Beverage teams to ensure quality, accuracy, and consistency. The IRD Manager strives to continuously improve guest and employee satisfaction and to maximize the financial performance of the department. The role supports the F&B Leadership Team through structured training, implementation of action plans, and initiatives to exceed departmental goals such as LQA scores, budget delivery, and team engagement.

Key Duties and Responsibilities

  • Leads and manages the IRD team and oversees all day-to-day operations within the department.

  • Ensures full understanding of all IRD roles and is able to support operations in the absence of colleagues when required.

  • Administers resort policies fairly and consistently, ensuring compliance and accountability across the team.

  • Conducts structured daily briefings and communicates operational priorities clearly, following up to ensure completion.

  • Oversees daily shift operations and ensures full compliance with IRD policies, standards, and procedures.

  • Plans and monitors staffing levels to ensure guest service, operational needs, and financial objectives are met.

  • Encourages and builds mutual trust, respect, and cooperation among team members, promoting a high-performing culture.

  • Ensures compliance with all Food & Beverage policies, standards, and procedures through training, coaching, supervision, follow-up, and hands-on leadership.

  • Reviews daily revenue reports, daily labor reports, and monthly profit and loss statements; analyses results and takes action where required.

  • Drives continuous improvement initiatives to elevate productivity, service quality, and guest satisfaction.

  • Coaches colleagues on service recovery, guest engagement, and conflict de-escalation to ensure professional handling of guest concerns.

  • Maintains full awareness of in-house VIPs and ensures team alignment through consistent pre-service updates and personalization.

  • Responsible for daily, weekly, and monthly shift planning and allocation of duties to optimize manpower and maintain consistent service standards.

  • Ensures procedures and management standards are fully implemented within the team to support quality service delivery.

  • Maintains regular and effective communication to align the team on business objectives, expectations, performance recognition, and results delivery.

  • Builds and maintains open, collaborative relationships with colleagues and ensures strong teamwork and alignment within the department.

  • Ensures all Food Safety standards (HACCP / DIVERSEY) are strictly followed at all times.

  • Collaborates with the F&B Leadership Team to support specialized catering events and manage diverse guest meal requirements, including dietary and allergy requests.

  • Collects guest feedback consistently, reports trends to management, and drives improvements based on service insights.

  • Supports the wider F&B operation with additional tasks and responsibilities as assigned by the management team.

Skills, Experience & Educational Requirements

  • Minimum 3 years’ experience in a supervisory/management role within IRD / Room Service or similar F&B operation.

  • Minimum 4–5 years’ experience in a recognized restaurant, luxury resort, or catering institution with high service standards.

  • Excellent communication and interpersonal skills, with the ability to lead teams and build engagement.

  • Strong operational understanding of luxury hospitality standards and guest experience expectations.

  • Solid knowledge of catering operations and beverage practices within the hospitality industry.

  • Proven ability to manage staffing, shift planning, and resource allocation based on operational demand.

  • Strong analytical ability and experience in monitoring revenue, labor performance, and departmental profitability.

  • Workplace training and operational exposure within a high-standard hotel or resort environment.

  • Experience with Micros (or similar POS systems) is an advantage.

  • Experience in a 5-star, upmarket resort environment is preferred but not essential.
